That is a Brinkmann Cimarron. Built by roger Davidson of horizon smokers after he and his brother sold Oklahoma Joe. Im restoring a Stillwater currently. It’s essentially the same exact smoker but with a Lowe shelf and door skirts.
There are 2 major problems with the design of this smoker. 1. Airflow control. The design does not allow for airflow to be controlled at all. The smoke just rolls out of the large gap between the lid and the barrell. There's a hole in the bottom that also cannot be closed off to limit the air intake. 2. Ash control.
Jul 3, 2021. #5. Brinkmann made a couple of versions of the Cimarron. The regular model, the Deluxe, and the Limited. You have the Limited because it has the larger wheels. The regular model came with 5 1/2" wheels. The Deluxe has a propane log ignitor as well as a side burner. My guess is that your smoker was made around 2005 or so.
In search of suggestions on getting the firebox of my Brinkmann rebuilt. Over the years, certain areas has metal worn thin. Has anyone had the firebox rebuilt on their offset smoker? Grateful for any suggestions.
7. 10. Apr 6, 2014. #1. I just purchased a new Brinkmann Charcoal smoker from Rona a few weeks ago. It's a new model, they don't even have a picture of it on their website as of yet. The factory part number is 855-4305-F. It replaces their smallest offset smoker and costs $269. The big difference is the chimney is now on the side, not the back.

Well a few days ago I ran across this smaller offset smoker for a great price. It appears to be a Brinkmann Cimmaron. I picked it up today. 16"x16" firebox. 30"x16" cooking chamber. 1/4" steel.
To answer your questions, that is an old water smoker. Wood/charcoal on bottom tray, water/flavorings in top bowl. Someone with more experience can help you get it setup to Q-up some good grubs! Used properly, the water smoker can compare with just about any other type of charcoal smoker.
2012-01-10at080623.jpg. randy cramer. Jan 4, 2014. It's made to set a 46 oz. juice can filled with wood chips or pellets on the cutout over the flame. Cover the open end tightly with foil and punch 2 or 3 small holes and it will smoke for a good long while. This thing is great for cold smoking.
I picked up an older (1/4” thick metal) Brinkmann Cimmaron offset smoker that needed to be “brought back to life”. I’ve removed all the rust from it, primed it with high temp primer, and then painted with high temp paint. I still need to get a replacement smoke stack (original one has rusted through on one side at the bottom).
Replacing the element is about $30 and if you take the steps mentioned above, about every 2 years you can drop another $30 to replace it again. Some might think replacing the smoker to a wood or charcoal is better, but if you have invested in "seasoning" your smoker, you can never replace the flavor and it will take some time to season a new one.
