I deeply understand the inconvenience caused and apologize for it. Just adding some visuals for clarity. You can Toggle out of the new Outlook at the top right of the new Outlook window.
If you want to use the Outlook for sending and receiving emails, we have the Outlook.com web version which is for free. You will just need to create a Microsoft account with this domains @outlook.com, @hotmail.com, @live.com, @msn.com. Please see here for the step by step guide How to create a new Microsoft account.
Try looking at the upper right of the new version and see if it says "Try the new Outlook", if it does make sure that it is turned OFF. I did this and it then gave me the old interface which allowed me to have non-Outlook accounts etc. Hopefully this will work for all struggling with the new version which simply no longer allows much to work.
