If you want a table to appear sorted by a certain column, you must sort the wikitext itself in that order. This is usually done for the first column. The VisualEditor makes it easy to move individual table columns and rows around. For info about that, and also about putting a table in initial alphabetical order see § Initial alphabetical order.
If a table is created in Visual Editor, the dialog includes a checkbox to "Make table sortable". If you check this box, then a reader can sort the table by any column, by clicking on the header cell for that column. Existing tables, or tables created in wikitext can be made sortable by adding the wikitable sortable class to the top of the table:
Being able to sort a table—especially a long table—makes it much more valuable to readers. For example, some people may want to look at a list of U.S. presidents in chronological order; others want to see it alphabetically. Whenever you create or edit a table, consider whether you can make it sortable.
To avoid this problem when doing an alphabetical sort, select all of the table except the header rows. To do so with multiple columns click the top left non-column-header cell, and then shift-click the bottom right cell. When you click on "ascending" or "descending" in the data menu the table will be sorted alphabetically. That is the default.
