    Yes, the anchovies. Agreed. I was raised to hate iceberg lettuce & never ate it. Then a year or so ago, it was the only lettuce available at a market so I got it. And... OMG. I cannot believe I went so long without it. So crunchy and fresh and delicious. I love it with Caesar dressing.

    For salad greens, I mix 1/3 iceberg for texture, 1/3 spinach for nutrition, and 1/3 romaine, butter, or arugula for flavor. When it comes to burgers, the only thing that comes close to iceberg is romaine (with the exception for arugula on certain craft burgers).

    Iceberg lettuce is a low quality salad ingredient! Elevate your salad to the next level! To answer your question, idk about “soapy,” but it’s weirdly bitter. As a kid it was my favorite part, but as an adult it’s unpleasantly bitter, and I say this as someone who typically enjoys bitter things.

    You can simply braise the iceberg lettuce in some chicken broth + ginger for a few minutes, then add some tofu, and finish with green onion. Optional unhealthy move: add a little oyster sauce and/or corn starch slurry to thicken it up.

    Kale salad with a little iceberg lettuce in it. Cucumbers, avocados, carrot, tomato, maybe some colorful peppers if I have them. Topped with shredded parmesan cheese, black pepper, a little sea salt, olive oil, and Balsamic vinegar. My absolute fave salad.
