Knowledge points. Does every build need knowledge farming at some point to have all the mantras and talents you want ? Or maybe there is a way to get everything you want directly and reduce the number of deep shrines you need to use ? I'm new in build making so I don't really know.

I would pick whatever you think is the coolest and do your first few runs with minimal help, the game is tough but figuring stuff out can be super fun. pick anything you want as your starter elements/s and weapon. Experiment, make new builds and don’t look up builds, just make your own.
