Traditionally, there is a distinction between Northern and Southern Chinese Islamic cuisine despite both using lamb and mutton. Northern Chinese Islamic cuisine relies heavily on beef, but rarely ducks, geese, shrimp or seafood, while southern Islamic cuisine is the reverse.
