The Best Temperature to Bake Salmon. 400°F (200°C): A great starting point, it reliably cooks salmon through while still maintaining a tender and juicy texture. Lower Temperature (350°F/175°C): Ideal for very thick fillets, or if you prefer a slightly softer, almost melt-in-your-mouth texture. Cooking time will be slightly longer.
