Clostridium perfringens is a common cause of food poisoning in the United States. C. perfringens produces spores, and when these spores are consumed, they produce a toxin that causes diarrhea. Foods cooked in large batches and held at unsafe temperatures (between 40°F and 140°F) are the source of C. perfringens food poisoning outbreaks.
Suspected causes include abnormal responses to bacteria or bacterial endotoxin, or a hypersensitivity to food. [2] Pathologically there is an increase in the permeability of the intestinal lining and a leakage of blood and proteins into the bowel. Clostridium perfringens has been found in large numbers in the intestines of many affected dogs. [1]
Clostridium perfringens causes a wide range of symptoms, from food poisoning to cellulitis, fasciitis, necrotic enteritis and gas gangrene. [16] [17] Clostridium tetani causes tetanus. Several more pathogenic species, that were previously described in Clostridium, have been found to belong to other genera. [6]

The major virulence factor of C. perfringens is the CPE enterotoxin, which is secreted upon invasion of the host gut, and contributes to food poisoning and other gastrointestinal illnesses. [3] It has a molecular weight of 35.3 kDa, and is responsible for the disintegration of tight junctions between epithelial cells in the gut. [6]
