Global milk production has increased rapidly over the past 50 years. According to Our World in Data, global milk production has nearly tripled since 1961, reaching around 930 million tonnes in 2022. The most popular milk is cow milk, followed by buffalo milk, goat milk, sheep milk and camel milk.
Production of some products is highly concentrated in a few countries, China, the leading producer of wheat and ramie in 2013, produces 95% of the world's ramie fiber but only 17% of the world's wheat. Products with more evenly distributed production see more frequent changes in the ranking of the top producers.
The lowest average production was in New Zealand at 3,974 kg (8,761 lb) per cow. The milk yield per cow depended on production systems, nutrition of the cows, and only to a minor extent different genetic potential of the animals. What the cow ate made the most impact on the production obtained.
