TODAY and NOW functions in Numbers. The functions Help says "The time zone for an iCloud file: The file’s time zone matches the time zone in iCloud settings when the file is first created." In other words, if the file is stored in iCloud the date doesn't update on opening. This is hugely annoying and inconvenient.

Recycleur does have a work-around. CMD-ENTER>TAB is still better than ENTER>RIGHT-ARROW>UP-ARROW>= to get to the formula box in the cell to the right. Thanks guys! I talked with Apple Numbers support. The rep is investigating why hitting TAB within the formula cell doesn’t advance the active cell to the right.
