The Cattaraugus Cutlery Company began as the New York distribution company J.B.F. Champlin and Son, founded by John Brown Francis Champlin and his son Tint in 1882. The Champlins expanded into knife production, and along with William R. Case and his brothers, they formed Cattaraugus Cutlery in 1886, based in Little Valley.
Fish fillet. A fish fillet, from the French word filet ( pronounced [filɛ]) meaning a thread or strip, [ 1] is the flesh of a fish which has been cut or sliced away from the bone by cutting lengthwise along one side of the fish parallel to the backbone. In preparation for filleting, any scales on the fish should be removed.
The term is based on the word "whet", which means to sharpen a blade, [2] [3] not on the word "wet". The verb nowadays to describe the process of using a sharpening stone for a knife is simply to sharpen, but the older term to whet is still sometimes used, though so rare in this sense that it is no longer mentioned in, for example, the Oxford Living Dictionaries.
