The STIX Fonts project or Scientific and Technical Information Exchange (STIX), is a project sponsored by several leading scientific and technical publishers to provide, under royalty-free license, a comprehensive font set of mathematical symbols and alphabets, intended to serve the scientific and engineering community for electronic and print publication.
The same font found its way into the Rosetta-derived writing recognition system in Mac OS X—Inkwell. The TrueType font can be made available to any application by copying the font file, which is embedded in a system component, to any font folder. (See List of macOS fonts for more information.)

SF has the codename SFNS in macOS and SFUI in iOS, regardless of the official name. Stylistic fonts exist, which are mainly present in the iOS 16 Lock Screen, Apple Cash, watchOS Watch Faces, and several promotional materials. These include chiseled, stenciled, semi-rounded, dotted, prisma, railed, and slab-serif versions.
The other fonts in this list (e.g. Cambria, Calibri), come with Microsoft Word for Mac, but are not installed system-wide on newer (post-2011) versions. Regardless, since not all Macs have Word, you can't count on those fonts being installed. Segoe UI is not available on Mac through legitimate means. None of these fonts are available on iOS.
