To change the email, go to YOU (top right) from your shop's page (as a buyer would view it), then click on Account, then click on Account tab across the top, scroll down to Change Email and put in the new one there. You don't need the old one so that's good. Translate to English.

personally, as the shop only has 18 sales, If I were you, I'd open a new shop , with a UK bank account, and UK status, and your cousin run their shop from the Netherlands.... that's hoping that shop was in your cousins bank account.... or close this one down, and set up a new shop each..

If OP keeps her original UK address, her buyers from EU will be charged VAT even though the she will be posting from EU. Here are the way that hacker did: 1) They send us the link for custom as buyer then request us to custom it. This link contain virus I think. 2) After 2 to 3 days of clicking, they will spy our gmail cookie, ETsy cookie even FB cookie... 3) They will create the new shop for us with the similar name with the old shop.
After click on the customer link, my account was hacked and then when I login with my old email the new shop will be displayed with the name very similar with my old shop. After found out in some Etsy group, I saw too many people get the same problem. I email Etsy many times but I have not heard back yet. Here are the way that hacker did:

I cleared my cache and cookies earlier and that didn't work. I also restarted my computer and that didn't work. I will check the add-ons to see if that is the issue.
