The latter-day term, "chipped-chopped ham" didn't show up until the late 80s-early 90s. Best explanation for this is when a much-larger meat producer started marketing the product and called it "chipped-chopped ham", that term was then also adopted by Isaly's presumably to limit product confusion in the market.
