If Windows character map is used to insert symbols (instead of the symbol dialog box built into MS Word), you can switch to an advanced view and search for character names (degree, theta, micro etc).     I don't think it's possible to add any symbols to the sections in the Symbols gallery, but you can add all sorts of things to the Math AutoCorrect list. By default, Math AutoCorrect includes shortcuts for all the Greek letters and many (maybe all) of the other symbols, each consisting of a backslash and the name of the symbol.
