That said, it’s pretty cheap steel. We use a honing rod pretty often and I hit the huusk knives with it about once a day. The edge retention isn’t as bad as others here are saying, you won’t have to sharpen it after every single tomato, but it will require knowledge of knife sharpening and pretty consistent upkeep.
On another note, their knives have much, much better workmanship than any other brand I have tried from aliexpress. And I dare say, better workmanship than some Shuns I have held. Knife sharpness from a video is a moot point anyway, I'm pretty sure I could sharpen any bit of metal you give to me enough to make a couple of cuts in an onion. It's just how long it stays that way. I could blunt the most expensive well made gyuto you can find and film myself having to smack the spine to get it through an onion.

The RH knife looks like a MAC MTH-80. Great profile for rocking and has enough blade height your knuckles do not hit the cutting board. It is easier to care for as it is stainless steel, and the handle design isn't prone to loosening on the tang.
