First, some basics The "new Outlook" is the replacement for the Windows 10 / 11 Mail, People, Calendar apps. It is essentially "Outlook on the web" (accessing an Outlook.com account via a browser), wrapped in an app framework with the added functionality to add external IMAP accounts.
I understand that you'd like to go back to the old version of Outlook or what we now call the classic version of Outlook for Windows. Assuming that you already are using "new" Outlook for Windows app now, you can revert this change by using the steps from the guide below.

It's as if the programmers that created New Outlook have never used an email program with the need of being productive. New Outlook also feels like it's a barely functional beta version. Quite bluntly - New Outlook is like a throwback to the 90's and stinks.
