Nipa palm vinegar, also known as sukang sasâ or sukang nipa, is a traditional Filipino vinegar made from the sap of the nipa palm (Nypa fruticans).It is one of the four main types of vinegars in the Philippines, along with coconut vinegar, cane vinegar, and kaong palm vinegar. [1]
Tubâ could be further distilled using a distinctive type of still into a palm liquor known as lambanóg (palm spirit) and laksoy (nipa). During the Spanish colonial period of the Philippines, lambanog and laksoy were inaccurately called vino de coco ("coconut wine") and vino de nipa ("nipa wine"), respectively, despite them being distilled liquor.
But since kaong palm vinegar is a by-product of alcohol fermentation, it is not as widespread as in the Philippines and is restricted to Christian communities like in central and northern Sulawesi. Most kaong palm in Indonesia and Malaysia are cultivated for their fruits and fiber, as well as sugar ( jaggery ) production.
