Micaela Ruiz Tellez (1821–1904), also known as "La Colchona", [1] was born in Estepa, near Seville, Spain in 1821. She was an enterprising woman who perfected a recipe for mantecados, [2] a traditional Spanish crumble cake often eaten at Christmas.
Estepa is well known for its production of Christmas-time sweets, mainly mantecado, or traditional Spanish crumble cake, notable for being based on pork fat. Since 2009 the production of these confections have been protected by a protected designation of origin, Mantecados de Estepa.
