You use Dexterity for attacks with a ranged weapon (something on the ranged weapons table), making a ranged weapon attack since there isn't any way to make a melee weapon attack with a ranged weapon¹. If a weapon (melee or ranged) has the finesse tag then you can choose to use either Strength or Dexterity for whatever attack you are making.
Re: Height advantage with Ranged Weapons? I gave ranged attacks from higher ground advantage in the campaign I'm running and it seemed good at the time. Some lizardfolk were throwing javelins at the party from a flight of stairs and their positioning mitigated the range penalties.
So what is in your opinion the best range dpr\archer build in 5e right now? There is quite a lot great builds now: 1. Crossbow expert elven accuracy sharpshooter hexblade. Easy advantage from devils sight\shadow of moil, range smites, sad cha, full caster 2. Classic xbe ss battlemaster.
Also, throw weapons are melee weapons, so if you have benefits that require melee weapons you can use them (even if you are losing out on the ranged aspect to do so). I feel like thrown weapons would work well if 5e fighters were closer to 3e fighters and you just get so many feats.

The basic questions itself are simple: Q.1: Does any attack with magical ranged weapon that uses ammunition (Bow +1 for example) would count as magical (ignores non-magical damages resistant) even if the ammunition used is a normal, non-magical one?

Whats the best one-handed ranged weapon? And whats the best simple/martial one handed ranged weapon? (assuming the first answer could be exotic) Have an idea for playing a guy with one arm (at least to start with) and want to be able to do something decent for the first few levels, without having to get up in melee with a one
My reading seems pretty clear -- shortswords and simple melee weapons are the only things that qualify as monk weapons, so they're the only thing (+unarmed) that scales with the martial arts damage table. Has there been an errata changing this? I'd love to run around with a shortbow on my monk but my reading of the PHB doesn't really gel with it.
