My mom always made her dressing with herb seasoned Pepperidge Farm stuffing mix and cornbread. Her recipe calls for chicken broth, onion, celery and eggs. I have a buddy who owns a Pepperidge farm cookie Route. Every account is 7 days a week. That sounds way to cheap. Something is up. My buddy bought his for 280k and brings home 2400$ a week net. But it does 15k a week in sales. My buddy works 6am to 6pm. He is prone to a lot more promotions, but a lot more stale.

A few years ago I put a probe in the cavity in the stuffing. I was surprised that it was a few degrees cooler than the breast which we limit to 163 F. That convinced me not to stuff the bird. So I only do the casserole (large baking pan actually) and we drizzle the turkey dripping, fat and all, over the completely prepared dressing in the pan.

Well, the bread should be stale. Some people, I believe, even toast it in the oven. I think it should be lightly tossed and not really mixed, too.
