Whisk 2 cups milk (whole or 2%), 5 eggs, 1/2 tsp salt, 1/2 tsp pepper, and the juice of half a lemon. Cut a baguette or Ciabatta bread into cubes (about 12 oz, or 6 cups) and place into a greased baking dish (I rub it with a buttered paper towel).
To assemble the strata, layer half of the English muffin cubes in the bottom of the prepared baking dish. Scatter half of the bacon-leek mixture on top, then cover with 1/2 of the grated Gruyère.
WHISK cream cheese spread, eggs and pepper in medium bowl until blended. Gradually add milk, beating well after each addition; pour over bread mixture. (Bread cubes should be evenly moistened.) Cover with foil. Refrigerate 2 hours. HEAT oven to 375°F. Bake strata, covered, 30 min. or until knife inserted in center comes out clean.
