In Evangelion, Adam and Lilith both represent one of the two "Fruits". Lilith and her offspring carry the Fruit of Knowledge, while Adam and his offspring carry the Fruit of Life. Without getting too much into things, these fruits offer different metaphysical properties for those that bear it.
There are hints within the series indicating that some kind of extraterrestrial beings created Adam and Lilith (like the black and white moons being "artificially constructed by an unknown source") but nothing explicit is shown.
