Top of the Hill was founded in 1996 by Scott Maitland, then a law student studying at the University of North Carolina at Chapel Hill.Maitland became interested in an under-construction building at the intersection of Franklin and Columbia Streets after learning that a national restaurant chain, wanted to open a new location there.

In the 1960s, Chapel Hill was a small college town in the midst of the civil rights movement. While the town had a reputation for being liberal, about a quarter of Chapel Hill's institutions were still segregated. Crook's Corner is a defunct Southern restaurant in Chapel Hill, North Carolina. The business was named one of "America's Classics" by the James Beard Foundation Awards.
