When my co-workers threw me a shower, the "hostess" said in front of everyone, "one more gift---no thank you cards!" I was a teacher and it was the end of the year, so everyone knew I was busy. I wrote a group thank you card and baked cookies for everyone. For the hostesses, you could do flowers or a potted flower/plant for the office.
I'd make some kind of joke. Maybe go with something like, "Dear Co-workers, I really appreciate the shower you had for the baby and me. It means a lot to me that I work with such a great group of people. Thank you so much for the diapers! Unfortunately, I think they'll come in handy. You'll have to ask DH about that!

I think MOST would find this tacky, I'm not sure why you are stressing on the wording. You might as well have them write their own thank you card. If someone has made an effort to show up at the shower and bring a present, the least the person can do is send a personalized thank you card.
So at my shower today I got a few gift cards/checks.
My daughters', 17 and 8, asked if they could throw my shower. Not knowing the "proper ettiquette" I Googled it. Most responses said the old school shower ettiquette rules are obsolete, and as long as you aren't throwing the shower for yourself then do what you want.

I don't have a specific idea for the wording, mainly because I think it's a ridiculous idea. One of the ways to show appreciation for the gifts your guests give you at a shower is to open the gifts at the shower. You typically give a public thank you at the shower and you follow it up by sending a written thank you as well.
