Outlook uses proprietary protocols that have been found insecure a couple of times and likes to use very insecure presets. And it's just really bad to deal with, even though the apple version is usually better than the one for Windows.

If you are on 13.5 Beta and can live with the bugs in Mail, use Mail. Personally, till Apple fixes Mail, I am sticking to the app designed for the email I am using.
I got this new bottom bar today out of the blue, Im on iOS 15.3. I dont remember having it before, feels like this is one of those server side updates. I think this new bottom bar makes the icon on the right kinda useless, now we have 2 different buttons to create a New Message.

That modern authentication is more on the Office 365 and Microsoft 365 side of things (business and enterprise subscription) than "outlook.com" (aka personal email) thing. If you have an "outlook.com" account, it doesn't matter whether you pick Exchange or "outlook.com".

I can mainly think of disadvantages when using Gmail via Apple Mail - to name a few, fetching email and sorting it with labels is just way smoother in Gmail app. The only possible AM plus I can think of is its UI, if you prefer it to that of Gmail app, but functionality-wise I still find Gmail better.
If that's what you expect or if you have a paid Gmail account with push (Exchange) you can try this: In iOS Mail, add the pertinent folders to the top area (Favorites) of the "Mailboxes" list. In Settings>Mail>Notifications>Customize Notifications>Favorite Mailboxes set Alerts ON and pick a sound. Then hope it works. Seems to.
Below steps fixed it for me. 1 - removed all mail accounts - freed about 1 from 5 Gb. 2 - used Dr clean and some other clean apps - freed few Mbs more - not sure this step was needed. 3 - removed mail app and added it back again via App Store. This step freed half a gig.
