Jeremiah Tower (born 1942) is an American celebrity chef who, along with Alice Waters and Wolfgang Puck, has been credited with pioneering the culinary style known as California cuisine. [1] A food lover from childhood, he had no formal culinary education before beginning his career as a chef.
Katy Sparks was head chef at reopening. She was replaced by celebrity chef Jeremiah Tower after half a year. This was Tower's first restaurant in 15 years, since he closed his Stars restaurant in San Francisco and retired. Half a year later, Tower left to be replaced by John Stevenson, who survived a year.

Portale was influenced by the New American cuisine movement from California in the 1980s and 1990s, notably from Alice Waters and Jeremiah Tower of Chez Panisse. In 2019 Portale left Gotham to found his eponymous restaurant on 18th Street. Victoria Blamey took over the kitchen, and the restaurant was awarded 3 Stars for her inventive cuisine.
