That Barrett Road access is a great place to launch a kayak which then opens up a lot of water. If you go upstream past that large gravel bar, the Middle Bosque River reasserts itself and becomes a clear running stream full of Perch and Bass, some big. At the current lake level you may be able to wade quite a ways upstream.

Fishing out of the kayak and searching for reds I'd kayak over to mexiquita flats or South Bay. They are both a good distance to paddle from the island but South bay you can launch right into if you drive over to Boca Chica beach. Walk-in wade areas you could walk-in behind the convention center or right behind IBC bank on Padre Blvd.

If you have a spot that you'd like to add to the map, anywhere in Texas or anywhere else, find the location in Google Maps, then click on the "Link" button at the top right of the map. It will support the ENTIRE kayak while hauling or storing and you will not need any foam. The kayak will also load easier by way of using the grooves to align the kayak each time and the plastic to plastic makes a smooth finish with little friction when loading and unloading. You already are using the same amount of PVC running side to side.

Also I see you plan to side mount the engine. With the side mounted outboard comes outriggers (or at least one on the side the engine is on). This is added cost, added rigging and tear down time and additional things to transport. I would not recommend adding an outboard to the side of your kayak without an outrigger or stablizer.

there are plenty of launch spots on the south shoreline between drum bay & x-mas bay. you can launch behind the crabbing pier on 3005, there is a neighbor hood on drum bay you could launch from or any of those little dirt roads on 3005 that lead into the bay. you also got ernies bait barn (red plane across from beach access #6). make sure you watch yourself on those dirt roads if it has rained ...
