Glen Moray started life as West Brewery in Elgin run by Robert Thorne & Sons, and was converted to a distillery with 2 stills in 1897. Following a fire and extensive rebuilding program at their Aberlour Distillery, the company focused on production of Aberlour whisky, allowing the Glen Moray distillery to run down.

[5] Production resumed 25 June 1997, and full production resumed in 1998. The distillery was reopened by Ed Dodson in 1997 and handed over to Stuart Thomson, who managed it from 1997 to 2006.

While a regular espresso may take between 18 and 30 seconds to 'pull', a 'espresso ristretto' is cut short at only 12 to 16 seconds.
