Quotation marks for emphasis of a single word or phrase are incorrect, and "scare quotes" are discouraged. Quotation marks are to show that you are using the correct word as quoted from the original source. For example: His tombstone was inscribed with the name "Aaron" instead of the spelling he used during his life.
Mac users, however, can write the correct accented character by pressing ⇧ Shift + ⌥ Option + E or, in the usual Mac way, by pressing the correct key for the accent (in this case Alt + 9) and subsequently pressing the wanted letter (in this case ⇧ Shift + E). It's not that quotation marks are some odd punctuation, it's not, but it's always the "use" of quotation marks in an email that can give me pause.
