Re: 5-Point Star I just searched Pinterest. Google (or search Pinterest) Betsy Ross one piece 5-point Star, she shows how to fold a piece of paper to make a 5 pointed star. I would think this would work with bigger paper, hers was about 8 inches. You might need to use newspaper opened all the way out so its big enough.
Re: 8 point star with Y seams. Carlie Wolf, try not to stress over the Y seams. They do take a little practice. The important thing is to make sure you have 1/4 overlap at the edges so you don't lose your points on the stars. When I do Y seams, I start from the outside edge and sew up to the 1/4 of the joining seam.
Brian I would make a star, then press it onto a piece of piece of freezer paper (the waxy side will help hold it steady.) Trace the shape of the star. Remove your star Trace another line 1/4 inch inside the star, this will be the sewing line. Cut out the background pieces on the sewing line.

These are the two patterns I saved from the M* site from Jenny’s tutorials on quilts that use 5” charm packs. I was surprised by how many each one called for. I ordered the periwinkle template from M* for the one. I just realized the Sweetwater Ridge charm packs I just ordered from Connecting Threads and the Bonheur charms

I'm so happy they did a tutorial on the this - I've been thinking about making one after watching their tutorial on tying quilt and I watched a video yesterday with a different method where you s ew strip sets then unpick and resew the end squares and it was confusing as heck to me, lol.
Honestly, I would just measure the block size, ex. 5". Yes, they are on point, but because the rows drop down into each other, you wouldn't always get the 7" diameter. Hope that makes sense.
Re: Periwinkle on point tutorial I've been thinking about your question and in the middle of the night I thought, layer cake. If you use the mini 2&1/2" template to go with a charm pack, wouldn't a layer cake be the one to use with the charm pack template? Maybe simplistic, but if you have a 10" square to spare, give it a try and see. Let us know.
