I've been through this process myself though and the easiest way is to save the pages as graphics files, typically PNGs, then open them in a standard graphics editor and convert them to gray-scale.

    It is a newsletter that we distribute and archive in color and also have commercially printed in black and white. In v. 2003, it was easy --I saved the color pub with a new file name (xxxxxB&W), then opened the Tools/Commercial Printing/Color Printing and choose Single Color/black. In Publisher 2010, I can't find any way to do it.
