Best order is to read whatever interests you. Just bear in mind to keep trilogies/series together. A lot of people in this sub think there's a "right" way to read Legends, but apart from obvious things not starting with book 14 of the New Jedi Order series, I'd say dive into whatever era or character's novels interests you the most. Honestly, I think you should find what you like and focus on finishing that era. The Old Republic era is quite small in number of books, then there's the Prequel and Original Trilogy eras. I'd say the the New Republic - New Jedi Order - Legacy eras are the only ones I say need to be read in order.
