For example, The University of North Carolina at Chapel Hill is commonly referred to as Carolina. I think in that instance it would be fine.</p>.

<p>Some colleges definitely have better sounding names than others. I do not mean name recognition, just simply how the name sounds. I’m tweaking my UC essays one last time, and I use my school’s full name in the very beginning and abbreviate it later on in the essay.

He just described them as business courses, including Marketing, Entrepreneurship, and Business Law (no quotations). It might be less formal looking if you did something like that. But you may have to reword that.
