In 1868, McIlhenny founded McIlhenny Company, and began manufacturing Tabasco brand pepper sauce. In 1870, he received letters patent for his sauce-processing formula. Edward Avery McIlhenny (March 29, 1872 – August 8, 1949), son of Tabasco Company founder Edmund McIlhenny, was an American businessman, explorer, bird bander and conservationist. He established a private wildlife refuge around his family estate on Avery Island and helped in preserving a large coastal marshland in Louisiana as a bird refuge.
The company was founded in 1898, when Louisiana entrepreneur (and former McIlhenny Company employee) B.F. Trapé grew tabasco chilies from Avery Island seed. B.F. Trapé founded the company B.F. Trappey and Sons and, with the help of his ten sons and one daughter, began producing his own sauce, which he called "Tabasco".
