The Unistrut hardware I looked at at Home Depot the other day had inserts that you could move along the Unistrut whereever you needed them, but once locked, didn't budge. So, if you had the projector already mounted, with 150+ pounds pulling down, it would seem difficult to impossile to actually move those inserts...

Any steel can or will exhibit that property. Unless you want to use aluminum or certain stainless alloys, you have to deal with it one way or another.
I found very strong "L" brackets in Home Depot near where they had the unistrut on display. The brackets are made of 3/16 inch thick steel. Here is what I did to mount my 6pg to the same joists. Cut 10 foot piece of channel strut in half to get 5 footers....didn't buy the really deep channel...it's only about 3/4" deep. If you're joists are 1 ft apart like mine....you can mount each 5 footer to 5 separate joists....with one joist being in the exact middle.
You can also use unistrut if you like. It is stronger than plywood and used to hang all sorts of things in buildings. You can find it at electrical supply and probably home depot. Just get two pieces to span the studs then attach the mount to that. Or attach the mount to the unistrut and then bolt the unitstrut to the walls with lag bolts.
I hear of all of these people using unistrut to mount thier Projector. I also have a BG 800. I had two small factory holes in the front and rear brackets on the projector. The top section of this is uni-strut and can be purchased at home depot for $2 a foot. Unistrut suspended by all-thread. Vibration Isolation between structure and platform. This would only cost a few hundred and would support a car. Ensure spring stiffness is appropriate for weight of supported assembly.

This extremely versatile and adjustable mount holds up to 90 lbs. and I plan to use it to hang Atmos speakers from my ceiling (4 x Chane 740 s at 25 lbs. each).
