Bill Miller Bar-B-Q is a San Antonio-headquartered restaurant chain that focuses on barbecue food, accompanying side dishes (such as potato salad and coleslaw), and baked goods. The restaurant started as a poultry and egg business in 1950 from a $500 loan.
Rudy's was established by Rudolph Aue in Leon Springs, Texas (now a part of San Antonio, Texas) in 1929 as a combination business consisting of a filling station, automobile repair shop, and grocery store. [2] In 1989 Rudolph added barbecue to the food menu, [2] combining the grocery and new restaurant element to make a "country store" feel.

The first restaurant of the chain was Famous Dave's Bar-B-Que in Hayward, Wisconsin. On the morning of November 3, 2014, it was destroyed by fire. Christopher B. "Stubb" Stubblefield, Sr. (March 7, 1931 – May 27, 1995) was an American barbecue restaurateur, music patron and a Barbecue Hall of Famer, known for his barbecue sauces, rubs and marinades distributed by Stubb's Legendary Kitchen, Inc.
The restaurant is named after Nicki Minaj's fanbase, the Barbz. [1] It started as a series of pop-ups in Fort Worth, Austin, and Lockhart. [2] [3] During a barbecue festival, their booth was placed across from an empty former bank building, which became the permanent location for the restaurant, which opened in May of 2023.
