If unchecking these 2 boxes makes it work in outlook correctly then I would suggest making the change at the system level instead of doing it in Outlook every time you print. If go to your computer's settings and view printer & scanners, you should be able to manage the properties of "Adobe PDF" as a printer.

Also note that Acrobat does provide a capability of creating PDF files directly from within Outlook from each or a combination of e-mail messages. There should be no need to print to the Adobe PDF PostScript printer driver instance. - Dov
Save the PDF on your Desktop (or other place where you will know where to find it); open the file with Photoshop Elements or Photoshop CC (I don't know about other photo editing software because I use only Elements and CC); Crop either the portion of the image you want, or the entire image to the dimensions you want (i.e. 8 1/2 x x 11); Re-save as a PDF.
