Add hot, fresh, strong coffee instead of the boiling water. Obviously, you don't need to use Hershey's cocoa. I'm in Canada, so I'm not sure about American Costco, but the Costco cocoa powder is the best I've found. The cupcakes are still great 2 days later at room temp in an airtight container.

This is my go-to chocolate cupcake recipe. She posted her recipe a few years ago and this looks to be the same one, but with more pictures. It’s tried and true in my experience and everyone who’s tasted the cupcakes I’ve made has liked them. I think most of the recipes I use come from her site, with my own minor tweaks here and there.
For bonus points, make 2 dozen dark chocolate and bacon, and the other two dozen with vanilla cake, maple frosting and bacon. They're especially great because they're as durable as any cupcake, but look sort of fancy with the bacon on top, PLUS: bacon.

Try using oil instead of butter or shortening for any cake recipe. Use and extra 1/2 tsp baking powder for fluffier if you like.
I’m most partial to Guinness Chocolate Cake recipes. But I do have a favorite buttercream recipe. For the buttercream I usually add more shortening and less butter than the recipe calls for.
