For a Newtonian liquid, the apparent viscosity is the same as the true viscosity, and the single shear-rate measurement is sufficient. For non-Newtonian liquids, the apparent viscosity is not true viscosity. In order to obtain true viscosity, the apparent viscosities are measured at multiple apparent shear rates.
Consequently, if a liquid has dynamic viscosity of n centiPoise, and its density is not too different from that of water, then its kinematic viscosity is around n centiStokes. For gas, the dynamic viscosity is usually in the range of 10 to 20 microPascal-seconds, or 0.01 to 0.02 centiPoise. The density is usually on the order of 0.5 to 5 kg/m^3.
Viscosity is a measure of a fluid's rate-dependent resistance to a change in shape or to movement of its neighboring portions relative to one another. [1] For liquids, it corresponds to the informal concept of thickness; for example, syrup has a higher viscosity than water. [2]

To take the measurement, the finger is released as a stopclock is started, and the liquid is allowed to run into a measuring container. The time in seconds is recorded as a measure of the viscosity. After lifting the cup out of the substance the user measures the time until the liquid streaming out of it breaks up, this is the corresponding "efflux time". On paint standard specifications, one denotes viscosity in this manner: efflux time, Zahn cup number. Zahn Cup Technical Specification
This measured kinematic viscosity is generally expressed in seconds of flow time which can be converted into centistokes (cSt) using a viscosity calculator. [ 2 ] Flow cups are manufactured using high grade aluminium alloy with stainless steel orifices (where indicated), flow cups are available with a range of UKAS / ISO 17025 certified ...
The same goes for shear viscosity. For a Newtonian fluid the shear viscosity is a pure fluid property, but for a non-Newtonian fluid it is not a pure fluid property due to its dependence on the velocity gradient. Neither shear nor volume viscosity are equilibrium parameters or properties, but transport properties.
