I can hardly believe you have had Apple Watch all those years. Apple Watch has neither Health nor Fitness apps (they are iphone apps) Watch has the Workout and Activity apps which strongly correlate to the fitbit activity tracking. Apple Heath has different step count then Apple Fitness App for today. Health App says 14,758. Fitness App says 4,448. I configured my iphone to take priority over my Apple Watch. Find the workout app on your iPhone App Store. It will tell you that it can only be downloaded on the watch. Click the share icon. Send the link to yourself in a text message. Open your messages on your watch and click the link. It should open the App Store on your watch and voilà, the workout app.
