He's maybe in his mid 30's, considering he met Gojo when Gojo was still a child. He might have been in his early 20's or teenage years when they met, and they only met once. They met again years later, Gojo was now a teenager then Toji was in his 30's, and the same day he died.
That was literally Toji’s plan from the beginning and I think even the anime gives a voiceover saying as much. He wore Gojo down from not sleeping and having Limitless on for 3 days straight until he deactivated it, which is when Toji attacked. Also teen Gojo, not adult Gojo.
He was still in the clan when he visited Gojo. Megumi is 15 , Gojo is 28, and Naoya is 27, but it seemed like Gojo may have been 3-5 years old when Toji visited him. At the very least, he was 2. Naoya looked to be about 5 when he met Toji. At the very least, again, he was 2.
Apparently Megumi was four or five when he died, and Toji had a domestic life for a brief while from when he was married until Megumi’s mom died, which was pretty soon after he was born. So there’s at least four years he was out being a serial killer, but I can’t find any sources about what he was doing previous to meeting Mamaguro and ...
In his early 20s I would say, since Naoya is only 1 year younger than Gojo and Toji left the Zen'in clan over a decade ago and is currently in his mid 30s, but also saw Gojo at age ~6. Conclusion: 21-24 years old here.
While Toji has a speed advantage, Jogo has much more power output, with large-scale AOE attacks that Toji would struggle to dodge. His domain is also the only one that Toji wouldn’t negate with his zero cursed energy, since the heat of Coffin of the Iron Mountain isn’t sure-hit.

I think Toji remarried to protect Megumi or at least to give him a safe place since Toji was always busy with his constructing his plan against the Zenin family and Megumi was a child he needed some sort of parental supervision.
Like Sarah Rector who was a black girl that got rich through luck. Thanks to her riches the Oklahoma Legislature made an effort to have her declared white. Or the Nazis which gave useful Jews or non"Aryans" the title "Honorary Aryan". And Toji is definitely useful enough for some good old ideology bending.
Overall it'd probably be a more extreme version of Toji vs. teen Gojo: Toji has the experience advantage but he must win early. Now against adult Geto, Toji wouldn't really have an experience advantage, so I'd say Geto definitely wins. I made the Vol. 0 Geto vs Yuta comparison because that's the clearest indicator we have of adult Geto's raw power.
During the Star Plasma vessel mission Gojo didn't notice Toji at all until he attacked. OP is referencing the instance when Toji and Gojo first encountered each other, manye years before that.Toji was walking behind Gojo and Gojo noticed him, which always bothered Toji because Gojo is the only person who has ever detected his presence without him wanting to be detected
