    Recently I switched to an ale yeast on the advice of the guy in the brewing store. They were brewing a 6 gallon pail of apple cider when I went. They used the local store brand of apple juice, a whole small bag of oak cubes, and the ale yeast he sold me. No sugar added. He said it takes about a week to ferment.

    I did close to 70 gallons of "concentrate" cider last year. Using Walmart brand frozen concentrate, I mix 2 cans per gallon of water and get about a 5-6 percent ABV. I find that using sucrose rather than dextrose to bump up the ABV gives the cider more of a sour taste and does not seem to need the Malic Acid.

    The unfiltered apple juice (cider) from the grocery store is made for drinking so it uses sweeter apples and doesnt make the best hard cider ive heard. I tried an experiment, I made two one gallon batches one with unfiltered uv paturized cider from Walmart, and one gallon Walmart apple juice.

    So I made the cider using everyones recommendations, Musselman's Apple Cider. I purchased 6 gallons of the cloudy stuff, used the same Champagne yeast I've used in the past and now finally tasting the stuff. I like a really dry sparkling cider.     I use the whole foods brand or Mendacino (North Coast) apple cider also available at whole foods. It comes in one gallon glass jugs and has been pasteurized and has no preservatives. We do have local apple cider that may be cheaper but I am way too paranoid about E. coli, I have taken care of way too many kids with it.
