To mix the ULTRACOLOR PLUS in "smaller" batches, we recommend a 4:1 mix ratio, i.e. 4 parts grout to 1 part water - by volume, of course. With that said, MAPEI always recommends doing a "dry blend" first.
I am simply looking for how to measure the right mixture of Mapei Ultraflex 2, to glue four (4) six inches by six inches of ceramic tiles. Can someone please advise me on what proportions of water and how much Ultraflex 2 should be used?
You can easily convert that water volume to weight and compare it to the weight of the powder in a ratio. Once you have that ratio, you are golden. Best to convert all ratios to metric.
Every bottle configuration of Grout Maximizer (26 oz, 49 oz, etc.) will state two things: 1) what size bag of grout to mix it with, and 2) whether SANDED or UNSANDED. Also, the Grout Maximizer is formulated so that ALL of the 26 oz. of additive is used with ALL of the 10 lbs. of Keracolor Sanded Grout, for the correct mix ratio & consistency.

I'd say you're right on the money in terms of your mixing ratio. 6 quarts of water to 50 lbs Versabond does work out to a 4:9.5 volume ratio. This will give you a stiffer mix. For a thinner mix, as when setting Kerdi or Ditra, you may want to stay closer to a 4:9 ratio.
You can also use an abundant amount of water for the cleaning process without worrying about weakening the grout or any shading issues. I have witnessed your issue with beads of water/latex forming on the tile in vertical applications.
If you think you are close to limits for thinset but don't need the full medium like the CBP granite and stone, use Mapei lft or laticrete 4xlt. They can be mixed at any consistency between thin and medium applications simply by varying the water quantity.
We picked the Woods French Gray tile and Pewter colored grout by MAPEI Ultracolor Plus FA that is supposed to have high stain resistance and no sealing required. There were lots of problems (eg. hollow sounding tiles when tapped), but the main problem is the grout.
If you take the standard ratio (50 lb bag, 6 quarts water), its 800 oz of thinset mix to 192 oz of water. So the ratio of thinset to water works out as 800/192, or about 4 oz of thinset to 1 oz of water.
