Hoisin Barbecue Baby Back Ribs by Leah Cohen This is a classic menu item at my restaurant, Pig and Khao. They are fall-off-the-bone tender but still have that satisfying, charred crisp.
Light the broiler. In a bowl, combine the hoisin, sambal oelek and sesame oil. Brush the mixture over the ribs and broil 8 inches from the heat for about 6 minutes, turning once, until browned and glazed. Cut into individual ribs and serve.
Remove the ribs from the oven and baste again with the honey mixture. Preheat a grill. Grill the ribs over moderately high heat, turning once, until lightly charred, about 4 minutes. Transfer the racks to a cutting board and cut into individual ribs. Arrange the ribs on a platter and serve the dipping sauce alongside.

Add the ketchup, vinegar, beef broth, hot sauce, Worcestershire sauce and molasses and bring to a boil. Simmer over low heat, stirring occasionally, until thickened, about 30 minutes. 4.
Reduce the heat to low and cook for 5 minutes or until the sauce is slightly thickened. Pour the soup mixture over the ribs. Bake, uncovered, for 30 minutes or until the ribs are fork-tender. Cut the ribs into serving-sized pieces. Return the ribs to the pan and toss to coat with the sauce.
