A simple trick allows to protect the "|" in template parameter values while still arriving as real "|" delimiter in the Wiki table, see the magic word {{!}}. Note that "!" (exclamation mark) has no problems with templates, it's the other delimiter used in Wiki tables. Here's the code for plan B: {|

Template data is controlled by MediaWiki's TemplateData extension, which allows users to write small bits of structured data to a template page, or to be transcluded into that template page (such as on the standard documentation page). Once a template has this structured data, it can be displayed properly in the VisualEditor.
Most templates allow authors to override the default text in this way, some require text put after the template call and some also need a vertical bar in between: {{table cell template}} text or {{table cell template}} | text.
