A Mason jar, also known as a canning jar, preserves jar or fruit jar, is a glass jar used in home canning to preserve food. It was named after American tinsmith John Landis Mason, who patented it in 1858. The jar's mouth has a screw thread on its outer perimeter to accept a metal ring or "band".
The glass jars come in a variety of shapes and sizes, have rubber seals, glass lids, and stainless steel clips. Food is processed in Weck jars using the water bath canning technique, not a pressure canner. During the canning process the lids are secured by the clips which must be removed once the processing is complete and the jars have cooled.
Mason's innovation was a square-shouldered jar with threaded screw-top, matching lid, and rubber ring for an airtight seal. Mason's easy-to-use, re-usable jars made home canning popular among American settlers, homesteaders, and even in urban homes. Most Mason jars were manufactured by competitors after his patent expired in 1879.
Home canning or bottling, also known colloquially as putting up or processing, is the process of preserving foods, in particular, fruits, vegetables, and meats, by packing them into glass jars and then heating the jars to create a vacuum seal and kill the organisms that would create spoilage.
Prior to 1933, Ball was the largest domestic manufacturer of home canning jars. In 1939 it manufactured 54% of all the canning jars made in the US. A drop in demand for the jars during the 1930s led the Ball brothers to begin manufacturing other types of jars and bottles for commercial use, and eventually expanding into other lines of business.
