A majority of the features OptiFine provides are now available in open-source Fabric mods that don't break other things, and actually do the job better than OptiFine would. See: LambDynamicLights, OkZoomer, and the queen of them all, Sodium.
The next step is to install performance-enhancing mods. Personally, the ones I recommend the most are Sodium, Lithium, Starlight, FerriteCore, and EBE. These five mods all target certain aspects of the game and optimise them. All are approved mods for use on EMC. Place those into your mods folder.
I updated all my mods and a new 1.16.4 multi mc instance, all ready to go a few days ago Fairly basic, only using easier crafting, fabric api, optifabric and optifine only because of connected textures
A few aesthetic mods work with Sodium & Iris right out of the box, like Fabric Capes and LambDynamicLights. However, some mods require a compatibility layer called Indium, due to technicalities with the APIs that they use. If you put Indium on top of Sodium, you can also get other mods to work, including Continuity and LambdaBetterGrass.
Mods which do not introduce any functionality to Minecraft while on EMC(either practical or aesthetic), do not need approved. It is acceptable to have them installed, since they may not work completely on the EMC servers. Bounding Box Outline Reloaded; DimensionalThreading - Fabric; Furniture Mod; Gravestone Mod; Inventory Sorter; Iron Chests Mod
Mods may not be compatible with each other or the current game version. Additional questions regarding Approved Mods may be directed to chickeneer. Using any mod, including approved mods, in order to bypass the intended conditions of an event is not allowed. Example: OptiFine is allowed as long as you don't use the zoom feature to aim in an event.

To add info here. Forge and Fabric are competing products. Forge will ignore Fabric mods. Hence the warning you saw, because you're launching the Forge profile and it won't load a Fabric mod. Look for the Fabric profile in the dropdown if you want to use Fabric mods. (edit: Optifine 1.17 isn't compatible with Forge.
There are also a few other mods that can help a bit: ClickThrough, for Fabric 1.16+ EasierChests, for Rift 1.13 and Fabric 1.14+ Mouse Wheelie, for Fabric 1.14+ Mouse Tweaks, for LiteLoader 1.12 and Forge 1.2.5+ Shulker Box Tooltip, for Fabric 1.14+ Now that that’s out of the way, on to the sorting itself! *This link leads to the 1.16-1.17 ...
Command Macros - Fabric; These rules apply to all macro mods even if the listed mods do not do these things. Macros are allowed on EMC to be used with the intention of reducing muscle fatigue and lowering the chance for nerve damage caused by excessive repetitive motions often found in video gaming.
