OBS is definitely the best in terms of recording whatever you want for as long as you want, but it is also the most complicated to use. Windows Game Bar is great for recording single applications for any period of time. ShareX is really great for recording short bursts. Like a ~5 minute screen recording of you doing something.

Win + W is the full on app. Win + Shift + S is the quick snipping to the clipboard. For years I had OneNote desktop installed just to keep the tray icon: it enabled Win + Shift + S. Nice.
