I like my jerky thin so I cut it between 1/16-1/8" slices. The jerky takes 3-5 hours at 160F to finish dehydrating.

I mix meat and marinade well, let it sit for an hour. Then I roll it out on silicone baking mats to about 1/4 to 3/8 in thick into a 10x14 in rectangle.
